DESCRIPTION:Register \nSpeaker: Vahidullah (Vahid) Tac\, Stanford University \nGenerative AI for food formulation: Designing healthy\, sustainable\, and delicious burgers \nAbstract:\nOur food choices impact both human health and the environment\, yet creating foods that are simultaneously tasty\, nutritious\, and sustainable is difficult. This research shows that generative AI can learn patterns of human taste from large recipe datasets and design new foods. Using burgers as a case study\, our model independently rediscovers the Big Mac and generates burgers optimized for taste\, sustainability\, or nutrition. The burgers optimized for taste matched or outperformed the Big Mac in a blinded survey with 101 participants\, while its sustainable and nutritious versions achieved substantially better environmental and health scores. We also demonstrate that the generation process can be personalized by tailoring recipes to an individual’s sex\, age\, weight\, and physical activity level.
